You know there are good fats and bad fats, right? Some fats help push your body to burn fat, while other fats push your body to store fat. Where does almond butter fall? Well, that depends on the type you buy! Conventional almond butters contain almonds that have been roasted in bad fats like sunflower oil, peanut oil or other types of vegetable oils. While almonds themselves are a good fat, when roasted in these bad fats, they take on the same qualities as bad fat and promote fat storage. Typical almond butters also have added sugars that you want to try to avoid as well. To keep these Funfetti AfterBurn Protein Bars as clean and nutritious as possible, I always use almond butter that contains only almonds—nothing else!
This recipe also calls for maple extract and liquid stevia. I know maple extra can be hard to find, that’s why I always buy Frontier Co-op Maple Flavor Extract on Amazon. I’m also extremely picky with the stevia I use, as many stevia brands add in artificial sweeteners and sugar alcohols. I prefer to use Sweet Leaf Sweet Drops to ensure I avoid those toxic additives!

Funfetti AfterBurn Protein Bars:
2 cups gluten-free oat flour
1 cup Vanilla AfterBurn protein powder
½ cup coconut flour
½ cup smooth almond butter*
¼ cup raw honey*
1 tbsp. vanilla extract
1 tsp. maple extract*
¼ cup plant-based milk
3 full droppers liquid stevia*
In large bowl, mix together oat and coconut flours, AfterBurn protein powder and stevia drops. Melt together almond butter and honey in the microwave and stir together until well combined. Combine wet and dry ingredients and stir until well mixed, about 3 minutes. Add vanilla and maple extract and plant-based milk. Stir until a batter consistency is formed. Add more milk if needed, no more than 1 tablespoon at a time. Line a 9” x 9” baking dish with parchment paper. Spread batter across the dish, pressing it down firmly to create a flat, even layer. Place pan in the refrigerator for at least 30 minutes. Once chilled, cut into 15 rectangles. Keeps for up to 1 week.
