I created this recipe because I am a sucker for chips and queso! But cheese and I aren’t good friends. Whenever I eat cheese, I feel really weighed down and lethargic, so I try to limit the amount of cheese I include in my diet.

Whenever I get a craving for some chips and queso, I try to fight it. My queso cravings started to arise more and more, so finally I decided to create a healthier alternative rather than always having to deprive myself. With this Dairy-Free Queso recipe, I never crave regular queso and always crave this alternative! The best part is, there is not one ingredient in it that I have to feel guilty about consuming! I even love ditching corn tortilla chips and replacing them with Siete chips to eat this Dairy-Free Queso absolutely guilt-free.

What Makes this Dairy-Free Queso so Healthy?

What makes Siete chips so healthy? First of all, eating this Dairy-Free Queso with these chips, rather than corn tortilla chips, eliminates processed hydrogenated oils from my diet. Corn tortilla chips are usually cooked in some sort of processed vegetable oil, which is awful for your metabolism because it encourages your body to store unwanted fat. Siete chips are the perfect addition to my healthy Dairy-Free Queso because they contain zero processed oils and are made entirely from whole food ingredients: cassava flour, coconut flour, avocado oil, chia seeds and sea salt. They are also gluten-free, grain-free and non-GMO!

This Dairy-Free Queso is So Simple!

What makes this Dairy-Free Queso recipe even better is that it’s so simple to make! All you have to do is roast butternut squash in the oven for 15 minutes, toss all the ingredients into a food processor or high-speed blender, blend until smooth and it’s ready to enjoy.

You can easily make this Dairy-Free Queso recipe nut-free by using ½ cup of hummus in place of the cashews. I also use almond milk in this recipe, but you can swap it out with your preferred milk of choice interchangeably.

You’ll want to ensure you soak your cashews overnight, or for at least a few hours, prior to making this Dairy-Free Queso. When your cashews are soaked, it creates a much creamier texture than unsoaked cashews.

Secret Ingredient: Nutritional Yeast

I also added nutritional yeast to this Dairy-Free Queso to give it a cheesier taste. Nutritional yeast is extremely popular among vegans, as it’s a great replacement for cheese in many recipes. Plus, it’s extremely high in protein and contains all the essential amino acids—perfect for all you herbivores out there!

Dairy-Free Queso

Ingredients:

1 cup ​butternut squash cubes

1 cup raw unsalted cashews (soaked overnight)

½ cup salsa

¼ cup nutritional yeast​

2 tsp. garlic powder

2 tsp.​ ​onion powder

1 tsp. salt

1 teaspoon cumin

1 teaspoon chili powder

½ tsp. smoked paprika

Juice of ½ lemon

½ cup almond milk

Directions:

Preheat oven to 450 degrees. Evenly spread butternut squash cubes on a baking sheet and roast for 15 minutes. Add all ingredients to a high-speed blender or food processor. Blend until smooth. Serve with Siete chips.
