Ingredients
- 2 cups shredded cooked cage-free chicken breasts
- 1/2 cup cherry tomatos – halved
- 1/2 cup diced red onion
- 1/2 cup chopped seedless cucumber
- 1/2 cup diced yellow pepper
- 4 tsp squeezed lemon juice
- 4 tsp olive oil
- 1/2 tsp greek seasoning
- 1/2 tsp finely ground seasalt
- 1/8 tsp cracked black pepper
- 1/4 cup crumbled feta cheese
Directions
- Cook and shred chicken breast with a fork. and combine all diced veggies. In a smaller bowl, whisk the lemon juice, oil, greek seasoning, seasalt, and cracked black papper. Pour this mixture in large bwol and toss. Cover and place in the fridge for 30 minutes before serving. Just before serving, sprinkle feta cheese over the top and enjoy!
