If you’re anything like me, it seems as if the minute you purchase a bundle of bananas, within a few days they turn brown. Impulsively you want to toss them, but wait! Our Burn Nutrition healthy banana bread recipe is the perfect way to be resourceful with those super ripe bananas and also fuel your body with a sweet treat that has ZERO refined sugars and plenty of nutrients!
Ingredients
3 cups of rolled oats
3 extra ripe bananas, mashed.
1 teaspoon baking soda
1 teaspoon cinnamon
¾ teaspoon baking powder
¾ teaspoon salt
1-1/2 teaspoons pure vanilla extract
1/3 cup coconut or almond milk
1/3 cup pure maple syrup
1-1/2 tablespoons apple cider vinegar
(optional) ½ cup Enjoy Life vegan /dairy free chocolate chips
Instructions
Preheat oven to 350 degrees. Spray a 9×5 bread pan or twelve cup muffin tin with coconut oil spray, or any cooking spray you have on hand. In a blender or food processor blend 2-1/2 cups of rolled oats until fine and powdery. In a large bowl, mash 3 extra ripe bananas until smooth. Pour in 2-1/2 cups of blended oats, plus ½ cup of whole rolled oats into the mixing bowl. Add baking soda, cinnamon, baking powder, salt, vanilla extract, milk, syrup, vinegar and chocolate chips to the banana and oat mixture. Combine all the ingredients until entirely blended. Pour mixture into loaf pan or muffin tin and bake, uncovered, for 35 minutes. Turn oven off and let the bread sit in the oven for 10 more minutes. Insert a knife or toothpick into the banana bread and make sure it comes out clean to ensure it is fully cooked.
Cool slightly before eating, and enjoy! When storing, keep covered and at room temperautre. Bread will last up to 5 days. Extra indulgent topped with melted ghee or clarified butter!
