Spicy Sweet Potatoes

Sometimes, when you get hooked on a recipe, it’s hard to break the cycle of continually cooking it for yourself and your family! After making the same old “chicken and potatoes” every Monday, Wednesday, Friday, you find yourself mindlessly tossing those ingredients into your cart… and before you know it you’re eating the same thing AGAIN!

Add some heat into your weekly routine with this killer recipe for ‘Spicy Sweet Potatoes!’ Serve them along side grilled chicken and fajita vegetables for a Mexican feast, or scoop them onto your plate with some baked salmon and arugula salad. No matter how they’re served, they’re sure to impress your guests, boost your metabolism and keep your clean nutrition in check!

 

Ingredients

4-5 Cups of Cubed Sweet Potato

1-1/2 Tablespoons EVOO

1 Tablespoon Chili Powder

1/2 Tablespoon of Paprika

1/2 Teaspoon Cayenne

1/2 Teaspoon of Crushed Red Pepper Flakes

3/4 Tablespoon Cumin

1/2 Tablespoon of Garlic Powder

1/2 Tablespoon of Onion Powder

1 teaspoon of Salt

1 teaspoon of Ground Black Pepper

 

Instructions

Preheat the oven to 425 degrees.

Fill a gallon sized Ziploc bag, or a plastic grocery bag, with cubed sweet potatoes. Pour EVOO over sweet potatoes, close bag and shake gently. After potatoes are coated with oil, add in all the remaining ingredients. You can adjust the measurements depending on how much spice you can handle!

(If you want to add a little bit of sweetness, toss in 1/4 teaspoon of cinnamon! You’ll be surprised at how great the flavor works with the heat from the other spices!)

Zip up the bag, ensuring it’s completely closed, and shake until all the potatoes are covered in the seasoning. Dump the ingredients onto your baking sheet, and spread out until evenly spaced.

Bake at 425 degrees for 15 minutes, toss with a spatula, then continue baking for 10-15 more minutes or until slightly browned. If you like extra crispy potatoes, turn your oven to Broil on HI and cook for no more than one minute. Keep a close eye on them in the broiler, they can char quickly!

Add sea salt and pepper to taste, and even a dash of chopped cilantro! Serve and enjoy!
