With all the clients I have worked with over the years, I have realized two common misconceptions that people have when it comes to eating healthy. The first: that eating healthy meals means you have to eat boring meals. The second: that eating healthy meals requires lots of time. Thankfully, both are far from the truth—and I’m here to prove that to you with this Super Simple Zucchini Lasagna recipe! This dish requires only four ingredients, takes just minutes to toss together and is so delicious, it’s a crowd-pleasing meal for the entire family. My husband actually begs me to meal prep this Super Simple Zucchini Lasagna for him every single week!

To keep this Super Simple Zucchini Lasagna the healthiest it can be, I always use both grass-fed ground beef and grass-fed goat cheese. When meat and dairy products are grass-fed, they contain a healthy ratio of omega-3 to omega-6 fatty acids. Conventional meat and dairy products are extremely high in omega-6 fatty acids, and when you over-consume these, you promote both inflammation and fat storage—which is definitely not what you are looking for. Grass-fed, on the other hand, is especially high in the omega-3 fatty acid CLA, which is an extremely healthy fat that’s great for promoting fat burning. People always ask me how I get my zucchini to be cut so perfectly when I make this Super Simple Zucchini Lasagna recipe, and I owe it all to my mandoline slicer*! Using this magical tool helps keep this recipe super simple. It cuts your zucchini into long, even strips and takes much less time than trying to do it yourself with a knife. Hint: Place your mandoline perpendicular to your body, pushing the handguard away from your body for easy slicing.

After you have cut your zucchini into strips, you only have a couple more steps until you have a delicious meal sitting on your table! Just cook the ground beef to your liking, add tomato sauce and layer the zucchini, meat sauce and goat cheese until the dish is full. Bake for 20 minutes and it’s ready to serve! I don’t think this Super Simple Zucchini Lasagna could get any more simple.

Super Simple Zucchini Lasagna


1 pound ground beef

6 oz. crumbled goat cheese

24-oz. jar tomato sauce

4 large zucchinis


Preheat oven to 350 degrees. Using a mandoline slicer, slice zucchini lengthwise into long, thin strips. Over the stove, cook the ground beef until lightly browned. Once cooked, add the entire jar of tomato sauce and stir until well combined. In a 9” x 13” baking dish, place a layer of zucchini, then a layer of meat sauce, then a layer of goat cheese. Repeat this pattern until the dish is full. Bake for 20 minutes.
