I cannot express how tired I am of preparing two different meals each night to satisfy both me and my children! My healthy meals rarely look appetizing to them, but I don’t want to feed them the processed foods I know they would love to gobble down. That’s why I absolutely love this sweet potato chicken nugget recipe. I often double the batch and store them in them in the refrigerator to ensure I have a healthy dinner on hand when the week gets crazy.

The Kid-Friendly Version…
For my kids, I pop a few of these chicken nuggets on their plate with a dollop of Primal Kitchen Ketchup (it’s sugar-free, organic and contains only whole food ingredients), along with some grapes and maybe a vegetable if I can get them to eat it. It’s so quick and easy and they absolutely love it!
The Adult Version…
For me, I like to “adult-up” my chicken nuggets with homemade chipotle aioli. Sometimes I’ll eat my nuggets like the kids and dip them into the aioli with a pile of veggies on the side. Other times, I’ll turn it into a loaded salad! I’ll take a big pile of mixed greens, toss a few nuggets on top, add some sliced cucumbers and avocado, and drizzle it all with the aioli like a salad dressing. Again, super quick and easy, yet so delicious!

Ingredients:
Sweet Potato Chicken Nuggets:
1 lb. ground chicken (uncooked)
3 cups cubed sweet potatoes (packaged, precut, uncooked)
2 tbsp. ghee
2 tbsp. coconut flour
1 tbsp. garlic powder
1 tbsp. onion powder
1 tsp. sea salt
Chipotle Aioli:
1 cup full-fat plain yogurt
¼ cup chopped fresh cilantro
½ tablespoon 100% pure maple syrup
2 tsp. chipotle powder
1 tsp. garlic powder
¼ tsp. smoked paprika
Fresh lime juice
Directions:
Preheat oven to 400 degrees. Place uncooked sweet potato cubes in a high-speed blender or food processor and process until finely grated. Transfer into a large mixing bowl and combine with all nugget ingredients. Stir until evenly mixed.
Using your hands, form small balls and place on a greased baking sheet. Slightly flatten to form the shape of a chicken nugget. Recipe should yield roughly 20 nuggets. Place in the oven and cook for about 25 minutes, flipping halfway through for even baking.
While the nuggets are cooking, combine all chipotle aioli ingredients in a small bowl. Remove nuggets from oven once fully cooked and allow to cool.
